  Complete mix in powder form for fine bakery wares application (choux, éclairs).

How to use

 Usage rate / recipe:

Tegral Clara Super 1000g -  Water (50-60°C) 1500g -  Oil 100g 

Application / method:

Add the Tegral Clara Super to the water and mix for 1-2 minute at low speed. Add the oil slowly during 30 sec and mix 4 minutes at medium speed until you get a smooth batter. Then let the batter rest for 10 minutes. Pipe out and bake. Bake for 20-minutes at 210°C. Close the damper for the first 6 minutes, then open damper.
